Cold smoking wild ham can take up to 2 days. Depending on fat content....to me not worth it better to roast in oven with a roasting bag for about 3 hours depends on how big and at 300 degrees. Smoke is best in strips for wild pig. Just my opinion. Not saying you can't do it but smoking that long raises the chances of bochulisim.
