Anyone here interested in maybe having a recipe & cooking forum here? I heard a rumor that Eric might know something about homemade wild pig sausage.

I'm all for that, maybe I can share some of my recipes but I need to break them down because I make mine all from from eye, smell and taste. I'm teaching my kids how to make sausage and smoke meat the same way my dad taught me and his father taught him. We made some sausages this past weekend, came out good, little sweet but their gett'n it.

Mouflon marinade
I use this marinade on all the mouflon that I throw on the grill:
Red Miso paste
Mirin
grated fresh ginger
a clove or 2 of minced garlic
a couple shakes of chili powder
Mix up enough mirin to the miso until the mix is smooth and about pancake batter consistency. Make enough to cover meat in a ziploc bag.
Add the rest, put in ziploc with meat, let sit overnight or a few hours, fire the grill, crack a beer, enjoy.
It's super easy and everyone that's had it liked it.
I need a recipe on how to smoke wild boar!!!!! I have a smoker but haven't done boar yet.

Got this one from Lanai after I (finally) shot my first buck. Marinate your deer in this overnight, then grill, bake, braise, jerky it...whatever! Fresh sweet taste and no gaminess whatsoever. Easy and ono!
1 cup shoyu
1 cup sugar
A handful of crushed ginger
A whole bulb of crushed garlic
3 tablespoons Sake
3 tablespoons vinegar

here's one for wild boar Sausage.
Breakfast Sausage - Makes 5 lbs.
5 lbs. ground pork
2 tbsp. table salt
1 1/2 tbsp. sage
1 1/2 tsp. thyme
1/2 tsp. ginger
3/4 tsp. nutmeg
1/2 tsp. white pepper
1/4 tsp. cayenne pepper
1/2 cup water
1. Combine the ground meat with all ingredients, mix/knead well. Taste test by cooking a small thin patty. Taste test by frying a small thin patty. Add more spices if needed at this time and remix. Taste test again if you feel it's necessary.
