lanai axis deer recipes

Post  timmy96815 on Sat Jun 27, 2009 6:30 pm

So far made adobo and Kalawen (raw tenderloins, vinegar, shoyu, ginger, onion)

What recipes do you guys know. The meat is frozen in a bag in the freezer and I'm not sure what part of the deer is what.
Thanks

OOOOOOOOOOHHHHHHHHhhhhh,
That sounds good.
So just cut it into cubes, put on skewers with bbq sauce?
Cut into strips, put on grill, turn with tongs?

Kimo, if you don't mind could you explain a little more on how you prepare the deer

Thanks
Jeff

p.s.
right now making a potroast with about 4 pounds meat.
Here is the pic.

make a egg bath then in a pan put flour, brown sugar, and shake an bake( for chicken) and make yourself a good ol southern chicken fried steak, B4 you do this soak the deer steaks in whole milk for 1 night and be sure you cut them thin (like meat jun) then throw away the milk dip in egg and cover with flour mix, fry in a skillet with hot oil untill done.....wallllaaa Laughing GRANDMAS special and sooooo ono

A good marinade for all kine meat:
-1/2 cup shoyu
-1/2 cup worcestire sauce
-3 tbsp olive oil (can use sesame instead...good too)
-1 tbsp garlic powder
-1-2 tbsp cider vinegar
-1 tsp black pepper
-1 tsp dried rosemary

Feel free to adjust the ingredients to taste. I usually kinda eyeball it. Sometimes I add some slices of ginger. Marinate venison for 1-2 hours, and grill or broil until meat is rare to med-rare. Don't cook it past med-rare. Enjoy.

went a little crazy (venison pastele sausage)

Post  honu ea on Tue Jun 30, 2009 12:49 pm

this was my first try at it.
used about 10# ground deer meat
10# ground pork butt
4 achote seasoning packs (white box from don quihote)
3 bottles (goya) brand cilantro paste.
some chili pepper flakes to taste.
mix um all up and put in a sausage maker.
(note: sausage casings are from wongs meats in sand island) be careful because they will only sell by the hank.(about 500 links of sausage worth)
the sausage came out pretty good for the first try
will do it again for sure

Just cut into 1/2 thick strips and put on sticks so you can hang the stick off the end of the grill so you dont have to flip with tongs
